
Cathy fell in love with food back in the late 70s when she landed her first job at a grocery store in Connecticut. The discovery of new foods on the East Coast triggered her curiosity to learn all she could about these different foods. Ones she was not familiar with from her West Texas upbringing. Through her grocery job and the opportunities through new friendships, Cathy got her first taste of different cuisines.
After moving back to Texas in the 80s, Cathy found herself on the ground floor of a new restaurant chain in the Dallas area. Wanting to know everything that had to do with anything in the restaurant industry, Cathy began to train under the capable hands of chefs in all areas of this established chain. From prep cook to management, Cathy became a student of food which led her to start looking into the foods we eat and how those foods work in our bodies. The true gift from her Lord Jesus Christ was brought front and center as she worked her way through the restaurant industry.
From selling her homemade salsa and jellies to local businesses to opening her restaurant, Chef Cathy’s passion for food has circulated across the country and around the world through her books and websites.
As a television personality for 10 years, Cathy found new outlets for her passion in working with those humbled by disease. As a food editor and stylist for a magazine, a columnist, educator at a college, food line creator and owner, and now the founding CEO of the nonprofit Eat LikeThe Rainbow, Inc. in the fight against childhood obesity, Chef Cathy finds her love of using God’s food to educate anyone hungry for information.
The free educational program, www.eatliketherainbow.org is a lifelong dream of Cathy’s. This program is available for K-4th graders on the website and is currently being used by teachers in classrooms. Chef Cathy has 40-plus years of researching and developing this program.
She is a personal chef and published author who has worked extensively with doctors and individuals to maximize health outcomes through natural foods throughout that time. Over the years, Chef Cathy has had the honor to work with individuals who suffer from cancer, heart disease, IBS, obesity, and other ailments. She also creates food plans for athletes and moms who want a better lifestyle for their kids.
